The Art of Low Intervention

At Ridge & Vale we believe the finest cider is a pure expression of its fruit. Our 100% juice ciders are made without additives or shortcuts, relying solely on wild yeasts native to our orchards. These ferment slowly and gently, revealing fine acidity, minerality and a bright, season-specific character. The skill lies in restraint: acting sparingly but at precisely the right moment.

Rooted in Wiltshire

Exceptional cider begins with exceptional fruit. Ridge & Vale is named for the chalk downs of the Ridgeway and the deep greensand soils of the Vale of Pewsey, where we tend traditional orchards with one aim: the highest fruit quality possible. These silt-and-chalk-influenced soils produce apples with pronounced minerality and fine acidity, yielding ciders of unusual clarity, length and aroma.

Orchards & Makers

Will, the cidermaker, grew up between New Zealand and Wiltshire. Developing an interest in apple trees while working in NZ orchards, he soon started planting his own and making cider in the Vale of Pewsey. The main orchard now stands in Wanborough, with large-growing traditional cider varieties spaced widely amongst calcareous grassland. Lizzie, from Gloucestershire, has been instrumental in scaling production from home batches to commercial releases. Together, we craft ciders reflective of season and place.
